I love these meals! I have a busy schedule and these meals not only give me the nutrition I need as a plant based athlete, but also free up a lot of time in meal prep. I am an ultra distance cyclist and I have a huge race in June 2020 called the Race Across the West. It is a 930 mile race with a 3-1/2 day time limit. It starts in Oceanside CA, through Arizona, Utah and finishing in Durango, CO. It is one of the toughest ultra races in the world.
I am using the race as a fundraiser for Feeding America and to use it to bring awareness of proper nutrition through whole food plant based diet. I am a two-time cancer survivor and was diagnosed with rheumatoid arthritis about 7 years ago. At the time of my RA diagnosis, I ate a lot of fast food, and processed food.
It was taking a lot of medications to control inflammation and other chronic medical conditions. I transitioned to a whole food plant based diet 6 years ago and my whole life has changed! I am completely off all medications and now doing ultra distance cycling races of 400 plus miles.
One of the things I love so much about LeafSide meals is that I can take them with me on the road and use them to fuel me before, during and after the races when I am not at home. I am insured that I will have good 100 percent plant-based meals when I travel. I love your meals!!!
